Preparation
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract. Mix until smooth.
- Stir in the boiling water until well combined.
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Frosting
- For the frosting, beat the cream cheese until smooth. Gradually add the powdered sugar and cocoa powder.
- In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
Assembly
- To assemble, place one layer of cake on a serving plate, spread with cream cheese frosting, and repeat for the next layer.
- For the ganache, heat the heavy cream until it begins to simmer. Pour it over the chopped chocolate and let sit for a few minutes. Stir until smooth and pour over the top layer of the cake.
- Chill before serving.
Notes
Use room temperature ingredients for the best results. For a vegan version, use plant-based cream cheese and aquafaba instead of eggs.
