Ingredients
  

For the cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs Must be at room temperature
  • 1 cup whole milk Must be at room temperature
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Important for moist cake
For the frosting
  • 8 oz cream cheese, softened Chilled before beating
  • 4 cups powdered sugar
  • 1 cup unsweetened cocoa powder For frosting
  • 1 cup heavy cream Whipped until stiff peaks form
For the ganache
  • 8 oz semi-sweet chocolate, chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract. Mix until smooth.
  4. Stir in the boiling water until well combined.
  5. Pour the batter evenly into the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Frosting
  1. For the frosting, beat the cream cheese until smooth. Gradually add the powdered sugar and cocoa powder.
  2. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
Assembly
  1. To assemble, place one layer of cake on a serving plate, spread with cream cheese frosting, and repeat for the next layer.
  2. For the ganache, heat the heavy cream until it begins to simmer. Pour it over the chopped chocolate and let sit for a few minutes. Stir until smooth and pour over the top layer of the cake.
  3. Chill before serving.

Notes

Use room temperature ingredients for the best results. For a vegan version, use plant-based cream cheese and aquafaba instead of eggs.
