Preparation
- Preheat your oven to 425°F (220°C).
- In a bowl, mix together the olive oil, garlic, cumin, paprika, smoked paprika, oregano, lime juice, and a generous pinch of salt and pepper.
- Rub this zesty mixture all over the chicken—don’t forget to sneak some under the skin for an explosion of flavor!
Cooking
- Place the chicken in a roasting pan and roast in the oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Once done, remove it from the oven and let it sit for 10 minutes. Garnish with fresh cilantro before serving.
Notes
For best flavor, marinate the chicken overnight. If using different chicken parts, adjust cooking time accordingly.
