Ingredients
  

For the shrimp
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup teriyaki sauce For marinating the shrimp
  • 2 tablespoons sesame oil For cooking the shrimp
For the bowl
  • 2 cups cooked rice (white or brown)
  • 1 cup mixed vegetables (such as bell peppers, broccoli, and carrots) Feel free to switch up your vegetables
  • 2 pieces green onions, sliced For garnish
  • sesame seeds (optional, for garnish)

Method
 

Preparation
  1. In a bowl, marinate the shrimp in teriyaki sauce for at least 15 minutes.
  2. While the shrimp is marinating, heat sesame oil in a skillet over medium heat.
Cooking
  1. Add the marinated shrimp to the skillet and cook until they turn pink and are cooked through, about 3-4 minutes.
  2. Stir in the mixed vegetables and sauté until tender.
  3. Serve the shrimp and vegetable mixture over the cooked rice.
  4. Garnish with sliced green onions and sesame seeds if desired.

Notes

These bowls keep well in the fridge for up to 3 days. Store in an airtight container. For longer storage, freeze the shrimp and veggie mixture (not the rice) for up to 3 months.
