Ingredients

  • 2 cups Fresh corn kernels Use fresh corn for the best flavor.
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Red onion, diced
  • 1 cup Cucumber, diced
Dressing
  • 2 tablespoons Lime juice Can substitute with lemon juice or apple cider vinegar.
  • 2 tablespoons Olive oil
  • to taste Salt and pepper Adjust seasoning to preference.
Garnish
  • 1/4 cup Fresh cilantro Can add more if desired.

Method
 

Preparation
  1. In a large bowl, combine the fresh corn kernels, halved cherry tomatoes, diced red onion, and diced cucumber.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to taste.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Garnish with fresh cilantro.
  5. Serve immediately or chill until ready to serve.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. For best results, it's freshest when served right after mixing. Feel free to mix the veggies and dressing separately if making ahead.
