Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted
For the filling
  • 3 packages cream cheese, softened Each package is 8 ounces.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces semi-sweet chocolate, melted
  • 1 cup whipped cream for topping
  • to taste chocolate shavings for garnish

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
Making the filling
  1. In another bowl, beat 3 packages of cream cheese, 1 cup sugar, and vanilla until smooth.
  2. Add eggs one at a time, mixing well after each addition.
  3. Stir in the melted chocolate until fully combined.
Baking
  1. Pour the chocolate mixture over the crust in the springform pan.
  2. Bake for 55-60 minutes or until the center is set.
  3. Let it cool, then refrigerate for at least 4 hours.
Serving
  1. Before serving, top with whipped cream and chocolate shavings.

Notes

Ensure cream cheese is at room temperature for a silky-smooth texture. Let cool completely before chilling. Experiment with flavors by adding espresso or peppermint extract during holidays.
