Preparation
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
Making the filling
- In another bowl, beat 3 packages of cream cheese, 1 cup sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in the melted chocolate until fully combined.
Baking
- Pour the chocolate mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours.
Serving
- Before serving, top with whipped cream and chocolate shavings.
Notes
Ensure cream cheese is at room temperature for a silky-smooth texture. Let cool completely before chilling. Experiment with flavors by adding espresso or peppermint extract during holidays.
