Ingredients

  • 1 cup almond flour
  • 1 cup rolled oats
  • 1/3 cup sugar-free sweetener
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 teaspoon vanilla extract
  • 1/4 cup coconut oil or butter, melted
  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, rolled oats, baking soda, and salt.
  3. In another bowl, whisk together the melted coconut oil, sugar-free sweetener, egg, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed.
  5. Scoop tablespoon-sized portions of dough onto a lined baking sheet.
Baking
  1. Bake for 12-15 minutes, or until golden brown.
  2. Let cool before serving.

Notes

Chill the dough for 30 minutes before baking for a chewier texture. You can mix in nuts, dried fruits, or sugar-free chocolate chips for added texture and flavor.
