Ingredients
  

For the Cookie Bars
  • 1/2 cup butter Softened
  • 3/4 cup sugar
  • 1 whole egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 3 tbsp cream cheese Softened
  • 1 tsp baking powder
  • 2 cups all-purpose flour
For the Frosting
  • 1/4 cup butter Softened
  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract For frosting
  • Pink food coloring gel Optional
  • Sprinkles Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper, letting it overhang for easy removal.
  2. In a large mixing bowl, blend 1/2 cup of butter with 3/4 cup of sugar until light and fluffy.
  3. Add 1 whole egg, 1 tsp of vanilla, and 1/2 tsp of almond extract. Stir in 3 tbsp of softened cream cheese.
  4. Separately, mix 1 tsp of baking powder with 2 cups of all-purpose flour, then gently incorporate into the wet ingredients.
  5. Smooth the dough into the prepared dish.
Baking
  1. Bake for 20-25 minutes, or until edges are golden and the center is set.
Frosting
  1. As the bars cool, whip together 1/4 cup of softened butter, 2 cups of powdered sugar, 2 tbsp of milk, and 1/2 tsp of vanilla extract. Add pink food coloring if desired.
Serving
  1. Once completely cooled, spread frosting over the bars and top with sprinkles.
  2. Slice into squares and serve.

Notes

These bars are best served at room temperature or slightly chilled. Store leftovers in an airtight container for up to 5 days, or freeze for up to 3 months.
