  • 2 cups corn (fresh or canned)
  • 1 large cucumber, diced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice
  • to taste Salt and pepper
  • 1/2 teaspoon chili powder (optional) Add for a bit of heat

Method
 

Preparation
  1. In a large bowl, combine the corn and diced cucumber.
  2. In a smaller bowl, mix together sour cream, mayonnaise, cilantro, lime juice, and chili powder (if using). Add salt and pepper to taste.
  3. Pour the dressing over the corn and cucumber mixture. Toss gently to combine all the flavors.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Fresh corn enhances the flavor. For added heat, include diced jalapeƱos. You can prepare ingredients separately to maintain crunchiness.
