Ingredients
  

For the crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter (cold and diced)
  • 0.25 cup powdered sugar
  • 0.25 teaspoon salt
  • 1 large egg yolk
For the filling
  • 0.75 cup heavy cream
  • 8 oz dark chocolate, chopped
For the topping
  • 2 cups fresh strawberries, sliced
  • 1 tablespoon sugar (for strawberries)
  • Mint leaves for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, powdered sugar, and salt until crumbly.
  3. Add the egg yolk and mix until a dough forms.
  4. Press the dough into a tart pan and poke holes with a fork.
Baking
  1. Bake for 15-20 minutes or until golden.
Making the ganache
  1. In a saucepan, heat the heavy cream until just boiling.
  2. Remove from heat and pour over the chopped chocolate, stirring until smooth.
  3. Pour the chocolate ganache into the cooled crust and refrigerate until set, about 2 hours.
Assembling and Serving
  1. Toss sliced strawberries with sugar and let sit for 10 minutes.
  2. Top the set tart with strawberries and garnish with mint leaves if desired.

Notes

Use cold butter for the crust to achieve that lovely flaky texture. Feel free to swap out dark chocolate for milk chocolate! Don’t rush the chilling time; it’s crucial for achieving that perfect set.
