Preparation
- Heat olive oil in a medium skillet over medium-high heat.
- Season chicken breasts with a sprinkle of salt on both sides and place them in the pan. Cook for about 4-5 minutes on one side until a golden crust forms.
- Flip and cook for another 4-5 minutes or until the chicken is fully cooked.
- Meanwhile, whisk together the strawberry jam, balsamic vinegar, and water in a small bowl.
Cooking
- When the chicken is nearly done, pour the jam mixture over it, making sure it seeps into the sauce.
- Reduce the heat and bring the sauce to a simmer, letting it bubble for 2-3 minutes until it thickens slightly. Stir in most of the basil and simmer for another minute.
- Remove the chicken breasts from the pan, pour the sauce over each piece, sprinkle with goat cheese if desired, and garnish with the remaining basil and sliced strawberries.
Notes
Serve with rice or salad to soak up the sauce. Reheat leftovers in the microwave or on the stovetop.
