Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
For the cheesecake filling
  • 8 oz cream cheese, softened Make sure to soften properly for smooth blending.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream Consider substituting half with Greek yogurt for a lighter option.
For the topping
  • 1 cup fresh strawberries, sliced You can also use blueberries or raspberries for variations.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs with melted butter until combined.
  3. Press the mixture into the bottom of a muffin tin to form the crust.
  4. Bake for 5-7 minutes until golden and allow to cool.
Cheesecake Filling
  1. In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
  2. Fold in the whipped cream until fully incorporated.
  3. Spoon the cheesecake mixture over the cooled graham cracker crust in the muffin tin.
  4. Top each bite with sliced strawberries.
  5. Chill in the refrigerator for at least 2 hours before serving.

Notes

These bites can be stored in the fridge for up to 3 days or frozen for up to a month. For serving, plate them on a colorful cake stand and consider drizzling with chocolate sauce or sprinkling crushed nuts for added flair.
