Strawberry Mixture
- In a third bowl, combine chopped strawberries, lemon juice, lemon zest, white sugar, and cornstarch.
Assembly and Baking
- Press half of the crumb mixture into an 8×8 pan lined with parchment paper.
- Spread the cheesecake filling evenly, followed by the strawberry mixture.
- Top with the remaining crumb mixture and bake for 40-45 minutes until golden brown.
- Let it sit for at least 30 minutes to set before serving.
Notes
Serve with a dollop of whipped cream or fresh mint. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Use fresh strawberries for the best flavor, or frozen when out of season. Let the bars cool completely before slicing to ensure neat cuts.
