Ingredients
  

Crust and Topping
  • 2 cups flour All-purpose flour
  • 1/2 cup brown sugar Packed
  • 1/2 tsp baking powder
  • 1/2 cup melted salted butter
  • 1 large egg
  • 1 tsp vanilla
Cheesecake Filling
  • 1 block cream cheese (250g) Softened
  • 1 tsp vanilla
  • 1/4 cup powdered sugar
  • 1 large egg
Strawberry Mixture
  • 2 cups chopped strawberries Fresh or frozen
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1/4 cup white sugar
  • 1 tbsp cornstarch

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together flour, brown sugar, and baking powder.
  3. Add in the melted butter, egg, and vanilla, mixing with a crumbling motion.
Cheesecake Filling
  1. In another bowl, beat together the cream cheese, vanilla, powdered sugar, and egg until smooth.
Strawberry Mixture
  1. In a third bowl, combine chopped strawberries, lemon juice, lemon zest, white sugar, and cornstarch.
Assembly and Baking
  1. Press half of the crumb mixture into an 8×8 pan lined with parchment paper.
  2. Spread the cheesecake filling evenly, followed by the strawberry mixture.
  3. Top with the remaining crumb mixture and bake for 40-45 minutes until golden brown.
  4. Let it sit for at least 30 minutes to set before serving.

Notes

Serve with a dollop of whipped cream or fresh mint. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Use fresh strawberries for the best flavor, or frozen when out of season. Let the bars cool completely before slicing to ensure neat cuts.
