- Preheat the oven to 400°F (200°C).
- Sauté the spinach and minced garlic in a pan until fragrant and wilted, then let cool.
- In a mixing bowl, combine ground beef or turkey, sautéed spinach and garlic, onion, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes. Mix until well combined.
- Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
- Tuck a mozzarella cube inside each meatball.
- Bake for 25-30 minutes until cooked through and golden brown.
- Garnish with chopped parsley before serving.
Notes
These meatballs are versatile; they can be served with spaghetti, in a sub, or eaten straight from the baking sheet. Store in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
