Ingredients
  

Pasta and Dressing
  • 2 cups Macaroni pasta Cooked according to package instructions
  • 1 cup Mayonnaise For creaminess
  • 1/4 cup Sweet pickle relish For sweetness
  • 1 tablespoon Mustard For a bit of tang
Vegetables and Seasoning
  • 2 stalks Celery Diced
  • 1/2 cup Red onion Diced
  • 1 cup Bell pepper Diced
  • 1/2 teaspoon Salt To taste
  • 1/2 teaspoon Black pepper To taste
Eggs
  • 2 large Hard-boiled eggs Chopped

Method
 

Preparation
  1. Cook the macaroni pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine mayonnaise, sweet pickle relish, and mustard.
  3. Add the cooked macaroni, diced celery, red onion, bell pepper, and chopped hard-boiled eggs to the bowl.
  4. Mix everything gently until well combined.
  5. Season with salt and black pepper to taste.
  6. Refrigerate for at least 2 hours before serving to allow flavors to meld.

Notes

Chill well for the best flavor. Optional variations: Add diced ham or chicken for a protein boost, or switch mayo for Greek yogurt for a healthier twist. You can also add jalapeƱos or sriracha for a spicy kick. Store in an airtight container in the fridge for 3-5 days.
