Ingredients
  

Wet Ingredients
  • 1/2 cup unsalted butter Softened
  • 1/2 cup white sugar
  • 1 tablespoon light brown sugar
  • 1/2 cup quality honey
  • 1 large egg
  • 1 teaspoon pure vanilla extract
Dry Ingredients
  • 2 and 1/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt
For Rolling
  • 1/3 cup vanilla sugar or coarse sugar For rolling

Method
 

Preparation
  1. In a bowl, cream the softened unsalted butter and granulated sugar together until pale and fluffy (about 2-3 minutes).
  2. Mix in the light brown sugar and combine fully.
  3. Add the honey, egg, and pure vanilla extract. Mix until smooth.
Mix Dry Ingredients
  1. In another bowl, whisk together the all-purpose flour, baking soda, baking powder, ground ginger, ground cinnamon, corn starch, and salt.
Combine and Chill
  1. Gradually add the dry mixture to the wet, mixing on low speed.
  2. Cover and refrigerate the dough for at least 30 minutes.
Baking
  1. While the dough chills, preheat your oven to 375°F (190°C).
  2. Scoop the dough using a tablespoon, roll into balls, and roll them in vanilla sugar.
  3. Place on a parchment-lined baking sheet and bake for 10-11 minutes until the edges are lightly golden.
  4. Let them rest on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a vegan version, substitute the egg with a flax egg and use coconut oil instead of butter. Experiment with adding chocolate chips or nuts for added crunch.
