Ingredients
  

For the Crust
  • 2 cups mashed potatoes Leftover mashed potatoes work great!
  • Butter or oil for greasing Butter or oil for greasing the pan
For the Filling
  • 1 cup shredded cheese Cheddar or mozzarella works best.
  • 4 large eggs
  • 1 cup milk
  • 1 cup diced vegetables Like bell peppers, spinach, or onions.
  • 1 cup cooked protein Bacon, ham, or sausage.
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Grease a pie dish or quiche pan with butter or oil.
  3. Spread the mashed potatoes evenly in the bottom and up the sides of the pan to form a crust.
  4. In a bowl, whisk together the eggs and milk.
  5. Stir in the cheese, diced vegetables, cooked protein, salt, and pepper.
  6. Pour the egg mixture over the potato crust.
Baking
  1. Bake for 30-35 minutes or until the quiche is set and golden brown.
  2. Let it cool for a few minutes before slicing and serving.

Notes

For crispy edges, broil for a few minutes before serving. Leftover mashed potatoes save time. Store leftovers in the fridge for 3-4 days or freeze for up to 2 months.
