Preparation
- Start by placing the boneless skinless chicken breasts at the base of your slow cooker, laying them flat for even cooking.
- Sprinkle the taco seasoning evenly over the chicken.
- Open the can of Rotel diced tomatoes and green chilies and pour it over the spiced chicken.
Cooking
- Cover the slow cooker with its lid and set to low for 6 to 8 hours.
- Once the chicken is cooked and shreds easily, add the Mexican cheese dip and mix gently.
Serving
- Turn off the slow cooker and let it cool for a few minutes before serving.
Notes
Tacos can be topped with fresh cilantro, sour cream, chopped onions, or jalapeƱos.
