  • 2 lbs boneless, skinless chicken breasts Base of the dish
  • 1 oz packet of taco seasoning For seasoning
  • 10 oz can of Rotel diced tomatoes and green chilies Adds flavor and moisture
  • 1.5 cups Mexican cheese dip For a creamy texture

Method
 

Preparation
  1. Start by placing the boneless skinless chicken breasts at the base of your slow cooker, laying them flat for even cooking.
  2. Sprinkle the taco seasoning evenly over the chicken.
  3. Open the can of Rotel diced tomatoes and green chilies and pour it over the spiced chicken.
Cooking
  1. Cover the slow cooker with its lid and set to low for 6 to 8 hours.
  2. Once the chicken is cooked and shreds easily, add the Mexican cheese dip and mix gently.
Serving
  1. Turn off the slow cooker and let it cool for a few minutes before serving.

Notes

Tacos can be topped with fresh cilantro, sour cream, chopped onions, or jalapeƱos.
