  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon zest and juice
  • 1 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Toss in the shrimp and cook until pink, about 3-5 minutes.
  4. Stir in orzo and chicken broth; bring to a boil.
  5. Reduce heat and simmer for about 10 minutes until the orzo is tender.
  6. Stir in heavy cream, lemon zest, lemon juice, salt, and pepper.
  7. Cook for an additional 2 minutes, then remove from heat.
  8. Garnish with fresh parsley before serving.

Notes

Timing is key; cook the shrimp just until they're pink to avoid overcooking. For a thicker sauce, simmer longer. Add spinach or cherry tomatoes for extra nutrition.
