  • 4 medium Sweet potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Honey
  • 1/2 cup Feta cheese

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into round discs.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange them on a baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for 20-25 minutes, flipping halfway, until golden and tender.
Serving
  1. Drizzle the roasted sweet potatoes with honey and sprinkle crumbled feta on top before serving.

Notes

Store in the fridge for up to 4 days. To reheat, pop them back in the oven for a few minutes to crisp up again. For a savory twist, try adding rosemary or thyme. To make it vegan, skip the feta and use nutritional yeast instead.
