  • 2 large large cucumbers
  • 1 pint cherry tomatoes
  • 1/2 unit red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing Ingredients
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • to taste salt and pepper

Method
 

Preparation
  1. Slice the cucumbers and cherry tomatoes.
  2. Finely chop the red onion and fresh parsley.
  3. In a large bowl, combine the cucumbers, cherry tomatoes, red onion, and parsley.
Dressing
  1. In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  2. Pour the dressing over the salad and toss to combine.
Chilling
  1. Chill in the refrigerator for at least 30 minutes before serving.

Notes
