Method
 

Preparation
  1. In a large bowl, combine the cucumber, bell pepper, red onion, and parsley.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  4. Serve immediately, or refrigerate for 30 minutes to let the flavors meld together.

Notes
