  • 1/4 cup milk

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs and milk until frothy.
  3. Stir in the chopped spinach, feta cheese, and season with salt and pepper.
  4. If you’re feeling fancy, fold in any optional ingredients like bell peppers or onions for an extra crunch.
  5. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until the muffins are set and lightly golden on top.
  7. Allow to cool slightly before removing from the tin. Enjoy warm or store for later!

Notes

Serve warm with a drizzle of hot sauce or Greek yogurt. These muffins store well in the fridge for 3-4 days and can be frozen for extended freshness. When reheating, a quick zap in the microwave for about 30 seconds works well.
