Ingredients
  

Seafood Filling
  • 12 ounces langostino tails (thawed, if purchased frozen)
  • ¼ cup mayonnaise, divided Use half for the filling and the rest for serving, if desired.
  • 2 tablespoons finely chopped fresh chives Adds flavor and color.
  • 1 teaspoon lemon juice Adds acidity to balance the richness.
  • Pinch sea salt
Rolls
  • 4 pieces split-top hot dog buns (preferably brioche)
  • 1 tablespoon softened butter (or olive oil or ghee) For toasting the buns.
  • ½ teaspoon garlic powder For sprinkling on the buns.
  • 3 cloves garlic, minced For making garlic sauce, if desired.

Method
 

Preparation
  1. Pat dry the langostino tails to ensure they are fully thawed and dry.
  2. In a bowl, mix together the langostino, half of the mayonnaise, and chives. Gradually add more mayonnaise until the mixture is lightly coated.
  3. If desired, prepare the garlic sauce in a separate bowl and set aside.
  4. Spread softened butter on both sides of the buns. Lightly sprinkle garlic powder over the top.
Cooking
  1. Toast the buns in a skillet over medium heat for about 2-3 minutes on each side until golden and warm.
Assembly
  1. Load the lobster salad into the toasted buns and serve immediately, preferably with the garlic sauce on the side.

Notes

Feel free to substitute langostinos for shrimp or crab if you prefer. For extra flavor, toss in diced celery or a dash of hot sauce.
