Preparation
  1. In a large bowl, combine the diced pineapple and cucumbers.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the pineapple and cucumber.
  4. Toss gently to combine everything nicely.
  5. Garnish with fresh cilantro or mint if you're feeling fancy.

Notes
