Ingredients
  

Chicken and Marinade
  • 2 pieces chicken breasts
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
Taco Assembly
  • 8 pieces small corn tortillas
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • as needed Lime wedges for serving

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, chili powder, cumin, salt, and pepper together.
  3. Coat the chicken breasts with the spice mixture.
  4. Let the chicken marinate for at least 30 minutes if possible.
Cooking
  1. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  2. Remove from the grill and let it rest for a few minutes before slicing.
  3. Warm the tortillas on the grill for about 30 seconds on each side.
Assembly
  1. Assemble the tacos by placing sliced chicken, fresh pineapple, red onion, and cilantro on each tortilla.
  2. Serve with lime wedges on the side.

Notes

Store leftover components separately in the fridge for up to 3 days. Reheat the chicken gently in the microwave or grill to avoid rubbery tacos. Consider adding jalapeƱos for spice or mango salsa for extra fruitiness.
