Ingredients
  

For the Peach Filling
  • 2 cups fresh peaches, peeled and sliced Use ripe peaches for maximum sweetness.
  • 1/4 cup granulated sugar Mixed with peaches.
  • 1 teaspoon vanilla extract Adds flavor to the peach filling.
For the Crust and Topping
  • 1 cup granulated sugar Divided; 1/4 cup for peaches, remaining for the crust.
  • 2 cups all-purpose flour You can substitute with gluten-free flour if needed.
  • 1 cup unsalted butter, softened Can be replaced with coconut oil for a vegan option.
  • 1 cup rolled oats Optional; can omit if desired.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a bowl, combine sliced peaches with 1/4 cup of sugar and vanilla extract. Set aside.
  3. In another bowl, mix flour, remaining sugar, baking powder, salt, and cinnamon.
  4. Cut in butter until the mixture resembles coarse crumbs. Stir in oats.
Assembly
  1. Press half of the mixture into the bottom of the prepared baking dish.
  2. Spread the peach mixture over the crust.
  3. Crumble the remaining mixture over the peaches.
Baking
  1. Bake for 30-35 minutes until golden brown.
  2. Let it cool before cutting into bars.
  3. Serve warm with vanilla ice cream if desired.

Notes

Feel free to use canned peaches but drain them well. These bars can be made ahead of time and frozen unbaked. They can last in the fridge for up to 5 days or freeze for up to 3 months.
