Preparation
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix the cottage cheese, milk, vegetable oil, and eggs until well combined.
- In another bowl, combine the flour, sugar, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the diced peaches and vanilla extract.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before serving.
Notes
Store leftovers in the fridge for up to 3-5 days or freeze for up to a month. Serve warm with honey or maple syrup.
