Parmesan Crusted Chicken Sheet Pan Dinner

A quick and easy one-pan dinner featuring crispy parmesan crusted chicken, perfectly roasted potatoes, and fresh green beans.

Ingredients
  

For the Chicken
  • 1.5 lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 T olive oil (for chicken)
  • 2 cloves garlic, minced (for chicken)
  • 1/3 c grated parmesan (for chicken)
  • 1/3 c breadcrumbs (Italian or plain)
  • 1/2 tsp cracked pepper
  • 1/2 - 3/4 tsp sea salt
For the Potatoes
  • 2 lb red potatoes, cut into bite-sized pieces
  • 2 T olive oil (for potatoes)
  • 2 T grated parmesan (for potatoes)
  • Salt and pepper to taste (for potatoes)
For the Green Beans
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil (for green beans)
  • 1 clove garlic, minced (for green beans)
  • 1 T parmesan (optional, for green beans)
  • Salt and pepper to taste (for green beans)

Method
 

Preparation
  1. Preheat your oven to 425°F.
  2. Line a sheet pan with parchment paper for easier cleaning or spray it with cooking oil.
  3. In a medium bowl, toss all ingredients for the potatoes together and stir well to coat.
Cooking
  1. Spread the potatoes on 1/3 of the pan and place in the oven for about 10-15 minutes.
  2. While the potatoes cook, toss all ingredients for the chicken in the same bowl, coating all the chicken well.
  3. Remove the pan with the potatoes and add the chicken.
  4. Toss together all ingredients for the green beans, then add them to the pan.
  5. Bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F.
  6. For extra crispy potatoes, turn the oven to broil on high for 4-5 more minutes if desired.
  7. Remove from the oven and let it cool for a few minutes before serving.

Notes

Got leftovers? Store them in an airtight container in the fridge for up to 3-4 days. Want to make it ahead? You can assemble it a day in advance and pop it in the oven fresh when hunger strikes. For freezing, it keeps well for up to a month. When ready to reheat, just toss it back in the oven for a hot, crispy revival.
