  • 1/2 teaspoon salt For seasoning.
  • 1/4 teaspoon black pepper For seasoning.
  • 1/2 teaspoon red pepper flakes Optional for a spicy kick.

Preparation
  1. Heat olive oil in a pan over medium heat.
  2. Season the cod fillets with salt and pepper.
Cooking
  1. Once the oil is hot, add the cod and sear for about 3-4 minutes on each side until golden brown and cooked through.
  2. In the same pan, add minced garlic and cook until fragrant.
  3. Add diced tomatoes, basil, and optional red pepper flakes, stirring to combine.
  4. Simmer the sauce for 5-7 minutes until slightly thickened.
Serving
  1. Serve the cod topped with the tomato basil sauce over pasta or with crusty bread.

Notes
