Preparation
- Preheat the oven to 350°F (175°C).
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes until the water is absorbed. Once cooked, let the rice cool slightly.
- In a bowl, mix the diced salmon with soy sauce, sesame oil, salt, and pepper.
- Cut the nori sheets in half and place them on a baking sheet.
- Spread a layer of sushi rice on each nori half, leaving some space at the edges.
- Add a line of the salmon mixture and a few slices of avocado on top of the rice.
- Roll the nori tightly around the filling and slice the roll into bite-sized pieces.
- Bake the sushi bites in the preheated oven for 10-12 minutes or until crispy.
- Serve warm and enjoy!
Notes
These sushi bites shine when served warm and fresh, possibly with a dipping sauce or sprinkled with sesame seeds. Store leftovers in an airtight container for up to 3 days and reheat in the oven to retain crunch.
