Ingredients
  

Sushi Base
  • 1 cup sushi rice Short-grain rice can be used for a firmer texture.
  • 1.5 cups water
Main Ingredients
  • 8 oz sushi-grade salmon, diced
  • 4 sheets nori (seaweed)
  • 2 tablespoons soy sauce Use low-sodium soy sauce for less sodium.
  • 1 teaspoon sesame oil
  • 1 avocado, sliced Feel free to add additional veggies.
  • 2 tablespoons green onions, sliced
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. Combine the rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce to a simmer. Cover and cook for 15-20 minutes until the water is absorbed. Once cooked, let the rice cool slightly.
  4. In a bowl, mix the diced salmon with soy sauce, sesame oil, salt, and pepper.
  5. Cut the nori sheets in half and place them on a baking sheet.
  6. Spread a layer of sushi rice on each nori half, leaving some space at the edges.
  7. Add a line of the salmon mixture and a few slices of avocado on top of the rice.
  8. Roll the nori tightly around the filling and slice the roll into bite-sized pieces.
  9. Bake the sushi bites in the preheated oven for 10-12 minutes or until crispy.
  10. Serve warm and enjoy!

Notes

These sushi bites shine when served warm and fresh, possibly with a dipping sauce or sprinkled with sesame seeds. Store leftovers in an airtight container for up to 3 days and reheat in the oven to retain crunch.
