  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth Low-sodium recommended.
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika For seasoning the chicken.

Preparation
  1. Rinse and pat dry 1 lb of boneless, skinless chicken thighs or breasts. Season with salt, pepper, and ½ tsp smoked paprika.
Cooking
  1. In a large, deep skillet, heat a little oil over medium-high heat. Add the seasoned chicken and sear each side for about 3-4 minutes until golden brown.
  2. Stir in 1 tsp each of garlic and onion powder, then add 1 cup of mixed vegetables and let them defrost a bit on the pan.
  3. Add 1 cup of long-grain rice, stirring to ensure it is coated in all the flavors.
  4. Carefully pour in 2 cups of chicken broth and mix thoroughly.
  5. Mix ½ cup of BBQ sauce with ¼ cup of honey in a small bowl until smooth. Pour this over the chicken and rice.
  6. Reduce heat to low, cover the skillet, and let it gently simmer for about 20 minutes or until rice is tender and chicken is cooked through.
Serving
  1. Serve the dish hot, garnished with fresh herbs if desired.

Notes

Tips: Don’t rush the searing time; browning the chicken enhances flavor. Try brown rice for extra fiber, adjust cooking time to 30-40 minutes. Swaps for vegetables are encouraged. For a spicy kick, add red pepper flakes or hot sauce.
