  • 1 cup shredded carrots
  • 1/2 cup mashed banana or applesauce Ripe bananas yield sweeter muffins.
  • 1/4 cup honey or maple syrup Adjust based on desired sweetness.
  • 1/4 cup milk (or plant-based milk)
  • 1/4 cup coconut oil or vegetable oil Melted for easier mixing.
Dry Ingredients
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon Add more for extra flavor.
  • 1/4 tsp salt
Optional Ingredients
  • 1/4 cup chopped nuts or raisins Use if desired for added texture.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it.
  2. In a large bowl, mix together the rolled oats, shredded carrots, mashed banana, honey (or maple syrup), milk, and melted coconut oil until well combined.
  3. In another bowl, whisk together the baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. If using, fold in chopped nuts or raisins.
  6. Divide the batter evenly among the muffin cups.
Baking
  1. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the muffins to cool slightly before enjoying!
