Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the almond flour, baking soda, salt, and optional cinnamon.
- In another bowl, combine the mashed bananas, eggs, honey or maple syrup, melted coconut oil or butter, and vanilla extract. Mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the chopped nuts.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container for 2-3 days at room temperature, up to a week in the fridge, or freeze slices for 3 months. Toast slices before serving for a delightful treat.
