Ingredients
  

Wet Ingredients
  • 3 medium ripe bananas The more speckled, the sweeter!
  • 2 large eggs Can be substituted with flaxseed meal for a vegan version.
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted Can substitute with plant-based butter for a vegan version.
  • 1/4 cup milk
  • 1 teaspoon vanilla extract Optional for added flavor.
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Add-ins
  • 1 cup chopped walnuts Toast for enhanced flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the melted butter and mix until combined.
  4. Stir in sugar, eggs, and vanilla extract until everything is well-blended.
  5. Combine the flour, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  2. Cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Serve warm with a pat of butter or with a dollop of honey or chocolate sauce. Store wrapped in plastic at room temperature for up to 3 days or freeze slices for up to 3 months.
