  • 1.75 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 2 large eggs Room temperature
  • 1 cup brewed coffee Fresh brewed, can use decaf
  • 0.5 cups vegetable oil
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, coffee, vegetable oil, and vanilla extract.
  4. Pour the wet mix into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool before serving.

Notes

Serve warm with vanilla ice cream or chocolate ganache. This cake lasts about 3-5 days in the fridge; store in an airtight container. For longer storage, wrap tightly and freeze for up to 3 months.
