Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, coffee, vegetable oil, and vanilla extract.
- Pour the wet mix into the dry ingredients and mix until just combined.
- Pour the batter into the prepared baking pan and smooth the top.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
Serve warm with vanilla ice cream or chocolate ganache. This cake lasts about 3-5 days in the fridge; store in an airtight container. For longer storage, wrap tightly and freeze for up to 3 months.
