Baking Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the melted butter with the mashed bananas.
- Stir in the baking soda and salt.
- Mix in the sugar, beaten egg, and vanilla extract.
- Stir in the flour until just combined.
- Pour the batter into the muffin tin, filling each liner about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack.
Notes
Serve warm with butter or honey. Can store at room temperature for 2-3 days, in the fridge for up to a week, or freeze for 3 months.
