Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the bananas until smooth.
- Add the eggs, buttermilk, avocado oil, cane sugar, brown sugar, and vanilla extract. Mix well.
- Sprinkle in the sifted flour, baking soda, and salt. Gently fold until just combined (don’t overmix!).
- Pour the batter into a greased loaf pan.
Baking
- Bake for 60-65 minutes, or until a toothpick comes out clean.
- Let it cool before slicing. Enjoy!
Notes
Serve warm with honey or maple syrup and a dollop of butter. Store leftovers at room temperature in an airtight container for up to 3 days, in the fridge for about a week, or freeze for up to 3 months.
