  • 2 fillets fresh salmon The star of the dish, fresh salmon adds great flavor.
  • 2 cups crushed tomatoes Use good-quality canned crushed tomatoes if fresh aren't available.
  • 1 cup black olives, pitted and sliced Green olives can be used for a different flavor.
  • 2 tablespoons capers Adds a briny kick to the dish.
  • 3 cloves garlic, minced Toasting the garlic enhances the flavor.
  • 2 tablespoons olive oil For cooking the salmon and sautéing the garlic.
  • to taste Salt and pepper Used for seasoning the salmon.
  • as needed Fresh parsley for garnish Adds a fresh aroma and color to the dish.

Method
 

Cooking Salmon
  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon with salt and pepper, then pan-sear it until cooked through, about 4-5 minutes per side.
  3. Remove the salmon from the skillet and set aside.
Making the Sauce
  1. In the same skillet, add minced garlic and cook until fragrant.
  2. Add the crushed tomatoes, olives, and capers. Stir and let simmer for about 10 minutes.
  3. Return the salmon to the skillet, spoon the sauce over the fish, and heat through for a few additional minutes.
  4. Garnish with fresh parsley before serving.

Notes

For an adventurous twist, swap salmon for sautéed chickpeas or eggplant to make it vegan. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
