Ingredients
  

Lobster Filling
  • 1 lb cooked lobster meat, chopped Use fresh or cooked lobster.
  • 1/4 cup mayonnaise Adjust the amount to suit your creaminess preference.
  • 1 tbsp lemon juice Fresh lemon juice is best.
  • 1 tsp Dijon mustard Can substitute with spicy brown mustard for a kick.
  • 1 tbsp chopped fresh chives For added flavor.
  • 1 tbsp chopped fresh parsley For added flavor.
  • 1/4 tsp celery salt
  • Salt and black pepper to taste
Rolls
  • 8 mini brioche rolls or slider buns Use good quality rolls.
  • 2 tbsp unsalted butter, melted For toasting the rolls.
  • Optional: shredded lettuce for layering Adds crunch.

Method
 

Preparation
  1. In a medium bowl, combine the lobster meat, mayonnaise, lemon juice, Dijon mustard, chives, parsley, celery salt, and season with salt and pepper.
  2. Chill in the refrigerator for 15 minutes.
Cooking
  1. Brush the insides of the rolls with melted butter and toast until golden brown.
  2. If desired, layer some shredded lettuce in the rolls before spooning in the chilled lobster mixture.
  3. Serve and enjoy!

Notes

Store leftover lobster mixture in an airtight container in the fridge for up to 2 days. Don’t forget to keep the rolls separate until you’re ready to eat them!
