Ingredients
  

Corn Base
  • 4 ears ears of corn, husked
Creamy Topping
  • 1/2 cup mayonnaise
  • 1 lime, juiced
  • 1/2 teaspoon chili powder
Garnishes
  • 1/2 cup cotija cheese, crumbled Feta cheese can be used as a substitute.
  • Fresh cilantro, chopped Do not skip this for the best flavor!
  • Salt, to taste

Method
 

Grilling
  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10-15 minutes, turning occasionally until slightly charred.
Preparing the Sauce
  1. In a bowl, mix the mayonnaise, lime juice, and a pinch of salt.
Coating and Garnishing
  1. Once the corn is done, slather the mayo-lime sauce all over the corn.
  2. Sprinkle with chili powder, cotija cheese, and chopped cilantro.
  3. Serve immediately and enjoy!

Notes

For leftovers, store corn in an airtight container for up to 3 days in the fridge or freeze tightly wrapped for about 2 months. Reheat on the grill for best results.
