- Cut the hard-boiled eggs in half and remove the yolks.
- In a bowl, mash the yolks with mayonnaise, sour cream, cotija cheese, chili powder, garlic powder, lime juice, salt, and pepper until smooth.
- Spoon or pipe the mixture back into the egg whites.
- Garnish with chopped cilantro and additional cotija cheese.
- Serve chilled.
Notes
Store in the fridge for 3-5 days, covered. Garnish just before serving. Variations include a vegan version or adding jalapeƱos for extra heat.
