  • 2 cups fresh spinach, chopped Use fresh spinach for best results.
  • 1 cup feta cheese, crumbled Feta adds a tangy flavor.
  • 1 cup shredded cheese (like mozzarella or cheddar) Choose your favorite type of cheese.
  • 4 large eggs Large eggs create a fluffy texture.
  • 1 cup milk Dairy or dairy-free alternatives can be used.
  • 1/2 cup onion, chopped Sauté until translucent for sweetness.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground is best.
  • 1/4 teaspoon nutmeg Adds depth of flavor.
  • 1/2 teaspoon dried oregano Use fresh if available for a stronger flavor.
  • 1 pie crust pie crust Store-bought or homemade.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, sauté the chopped onion until translucent, then add the chopped spinach and cook until wilted.
  3. In a mixing bowl, whisk together the eggs, milk, salt, pepper, nutmeg, and oregano.
  4. Place the pie crust in a pie dish and layer with spinach, feta cheese, and shredded cheese.
  5. Pour the egg mixture over the filling.
Baking
  1. Bake for 35-40 minutes or until the quiche is set and golden on top.
  2. Allow it to cool slightly before slicing and serving.

Notes

Serve warm or at room temperature with a fresh green salad drizzled with vinaigrette. Store leftovers in the fridge for 3-4 days or freeze for up to 2 months.
