  • 1 pieces cucumber, diced
  • 1 cup blueberries
  • 1 pieces avocado, diced Optional, can be substituted with diced bell peppers.
  • 1 tablespoon juice of lime Freshly squeezed for best flavor.
  • to taste salt
  • pieces fresh cilantro for garnish (optional) Adds a burst of flavor.

Method
 

Preparation
  1. In a large bowl, combine the diced mangos, cucumber, blueberries, and avocado.
  2. Drizzle with the lime juice and sprinkle with salt.
  3. Gently toss to combine, ensuring all the fruits and veggies are coated in lime juice.
  4. Garnish with fresh cilantro if desired.
  5. Serve immediately or chill in the refrigerator for a refreshing salad.

Notes

This salad is best enjoyed fresh, but you can store it in the fridge for up to 24 hours. To maintain freshness, keep lime juice separate until ready to serve.
