- In a bowl, combine the chopped lobster meat, mayonnaise, lemon juice, celery, and chives. Mix well and season with salt and pepper to taste.
Toast Buns
- Butter the outside of the rolls generously and toast them in a skillet until golden brown.
Assembly
- Fill each toasted roll with the lobster mixture.
- Serve cold and enjoy your homemade Maine lobster rolls!
Notes
For best texture, serve immediately and avoid letting the rolls become soggy. Leftovers can be stored in the fridge for up to 2 days. Freeze the lobster mixture if needed, but not the buns.
