Ingredients
  

For the zucchini fries
  • 2 medium zucchini Choose firm zucchinis for the best texture.
  • 1/2 cup breadcrumbs (whole wheat or regular)
  • 1/4 cup grated Parmesan cheese (optional) Can be omitted for a vegan version.
  • 1 tsp garlic powder
  • 1 tsp paprika
  • to taste Salt and pepper
  • as needed Cooking spray or olive oil Use to prevent sticking and aid in crisping.

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchini into sticks or fries.
  3. In a bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Cooking
  1. Dip each zucchini stick in the mixture, ensuring they are well coated.
  2. Arrange the zucchini fries in the air fryer basket in a single layer.
  3. Spray lightly with cooking spray or drizzle with olive oil.
  4. Cook for about 10-12 minutes, or until golden and crispy, shaking the basket halfway through.
Serving
  1. Serve warm with a dipping sauce of your choice.

Notes

For best results, don’t overcrowd the basket. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer for a few minutes before serving.
