Ingredients
  

For the fries
  • 26 ounces frozen French fries Use your favorite brand or homemade fries.
For the cheese sauce
  • 2 tablespoons butter Unsalted butter is recommended.
  • 2 tablespoons all-purpose flour For thickening the sauce.
  • 2 cups milk Whole milk gives the creamiest result.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon ground white pepper Black pepper can be substituted.
  • 2 teaspoons ranch seasoning powder
  • 1/2 teaspoon cayenne powder Divided; adjust for spice level.
  • 8 ounces white cheddar cheese Freshly shredded for best melting.

Method
 

Preparation
  1. Preheat your oven according to the instructions on the frozen French fries package.
  2. Arrange 26 ounces of frozen fries in a single layer on a baking sheet.
Cooking
  1. Bake the fries until golden brown, turning once for the best crispiness.
  2. In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat until it bubbles gently.
  3. Sprinkle in 2 tablespoons of all-purpose flour, whisking constantly to form a smooth roux.
  4. Gradually pour in 2 cups of milk, whisking continuously to prevent lumps. Let it simmer until thickened.
  5. Season with 1/2 teaspoon salt, 1/4 teaspoon white pepper, 2 teaspoons ranch seasoning, and 1/4 teaspoon cayenne powder.
  6. Reduce heat to low and slowly add 8 ounces of shredded white cheddar cheese, stirring continuously until melted.
  7. Place the crispy fries on a serving plate and drizzle with the warm cheese sauce.
  8. Sprinkle with the remaining 1/4 teaspoon cayenne powder for extra zing.

Notes

Serve warm with a side of ranch dressing or homemade garlic aioli. For leftovers, store in an airtight container in the fridge for up to 3 days.
