  • 1 lb Lobster meat Cooked and chopped into chunks
  • 4 rolls Brioche rolls Fresh for best taste
  • 1/2 cup Mayonnaise For creaminess
  • 2 tbsp Butter Melted, plus extra for toasting
  • 2 cups Kettle chips For serving
  • 4 cups Cold beer or choice of beverage For serving

Method
 

Preparation
  1. Cook the lobster meat and chop it into chunks.
  2. In a bowl, combine chopped lobster meat with mayonnaise and melted butter, mixing well.
  3. Toast the brioche rolls until golden brown.
  4. Fill the toasted brioche rolls with the lobster mixture.
  5. Serve the rolls with kettle chips and a cold beer or your choice of beverage.

Notes

For best flavor, don't skimp on the butter. Leftovers can be stored separately in the fridge for up to 2 days; toast rolls before serving again. Variations include Maine-style and vegan alternatives.
