  • 1 large egg Adds moisture and binds the mixture.
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • powdered sugar for dusting Optional.

Method
 

Preparation
  1. Gather all your ingredients, ensuring the butter is at room temperature.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until fluffy.
  3. Stir in the lemon zest and lemon juice.
  4. Beat in the egg until fully mixed.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Cover the dough and chill in the refrigerator for at least 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Roll chilled dough into balls and place on a parchment-lined baking sheet, leaving space between them.
  3. Bake for 10-12 minutes or until edges are lightly golden.
  4. Cool on a wire rack and dust with powdered sugar if desired.

Notes

For a more gourmet touch, serve these cookies with tea or coffee. They can also be made into cookie sandwiches with lemon frosting.
