  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 tablespoon additional honey drizzle on top For extra sweetness.
  • ½ cup extra blueberries for garnish Optional garnish.

Preparation
  1. Place 1 cup of cottage cheese into a food processor and blend until silky smooth.
  2. Gradually add 1 cup of almond flour to the mix.
  3. Add 1 tablespoon of lemon zest, 1 teaspoon vanilla extract, and a pinch of salt.
  4. Drizzle in 2 tablespoons of honey or your favorite sweetener, stirring until well combined.
  5. Gently fold in 1 cup of fresh blueberries.
  6. Form small, bite-sized balls using your hands.
  7. Garnish with extra blueberries or a drizzle of honey.

Notes

These bites can be stored in an airtight container for up to a week in the fridge, and last for about a month in the freezer. Don't rush the blending for a smoother texture, and feel free to experiment with different fruits!
