  • 1/4 cup green onions, chopped Add just before serving for crunch.

Preparation
  1. In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, and apple cider vinegar.
  2. Mix until well combined, it doesn't have to be perfect!
  3. Season with salt and pepper to taste.
  4. Fold in the chopped green onions.
  5. Serve in lettuce wraps or as a dip. Enjoy!

Notes

For a spicier kick, add a pinch of paprika or hot sauce. This salad can be stored in an airtight container for 2-3 days in the fridge.
