- In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, and apple cider vinegar.
- Mix until well combined, it doesn't have to be perfect!
- Season with salt and pepper to taste.
- Fold in the chopped green onions.
- Serve in lettuce wraps or as a dip. Enjoy!
Notes
For a spicier kick, add a pinch of paprika or hot sauce. This salad can be stored in an airtight container for 2-3 days in the fridge.
